Every single harvest is completely unique, even by varietal. Although predominant characteristics might be similar in each variety, the nuances will always be distinct. The color, crystallization rate, and taste are rarely exactly the same. This continues to be a source of excitement and inspiration!

Lehua Blossom Blend: A multi-floral honey, meaning the bees foraged predominantly from the Lehua Blossom of the Ohi'a tree, but also from a bouquet of other wildflowers blooming on the Big Island in early June when this honey was harvested. This contributes sweet layers of floral notes to the taste profile. It also creates a lovely coarse texture from its crystallization. This honey has a little more body than the single-varietal Lehua Blossom, but has many of the same delicate flavors.

Java Plum Blossom: A varietal unique to the Big Island. Harvested in Spring from North Kohala bee yards, this honey has the tendency to stay liquid longer than any other honey the hives produce. The Java Plum Blossom honey has a powerful taste profile of ripe tropical fruits such as guava and mango. Its extremely sweet flavor carries the bold and pungent body of exotic honey from the Hawaiian Islands.

Wai Meli

Big Island Moonbow Farms is a small-scale beekeeping venture located on Hawai’i Island. Inspired by the plight of the honeybee in Hawai’i and worldwide, they have been caring for honeybees in an organic fashion since 2011. While their primary focus is the health and well being of our bees, their diverse apiary locations allows them to capture several of the unique nectar sources the Big Island has to offer. With immense passion, and the combined efforts of family and bees, they are pleased to provide Wai Meli, an array of small harvest, local, raw honeys.

Throughout the year they typically harvest the following honey varieties: Christmas Berry, Macadamia Blossom, Eucalyptus, Lehua Blossom, combinations of all of these varieties as flowering seasons transition, and several Multifloral blends, of which the main nectar sources are undetermined. As this is truly a natural product, every single harvest is different, even by varietal. Each harvest of honey is completely unique. Although predominant characteristics might be similar in each variety, the nuances will always be distinct. The color, crystallization rate, and taste are rarely exactly the same. This continues to be a source of excitement and inspiration!

Working with their bees and receiving this amazing product is a true labor of love. Wai Meli believe beekeeping is a synthesis of many elements including farming, biology, and art. There are many variables involved in nectar selection and foraging availability; location, weather patterns, honeybee health, and hive management all play vital roles in the production of honey. Each harvest is seasonal and determined by the preferences of the honeybees. Their honeys are unheated to maintain nutritive value and true character. Hopefully, you will enjoy Wai Meli too!
