Cherished by tofu-makers for its purity and mineral-rich composition. It is the only nigari in the world made from Kona's pristine 850-year-old, 2200 ft. deep open waters.

Nigari, a mineral-rich by-product of the salt making process, is a versatile pantry staple. Kona's deep ocean water is naturally evaporated under the warm Kona sun using a process designed to create pure sea salt crystals, flakes and nigari. 

Use Nigari to make your own tofu or ricotta cheese!
Tofu is very easy to make. Fresh soymilk, a little nigari and low heat is all it takes. It can be made with a stove, microwave or instant pot. Nigari is known in the West as bittern, a coagulant used to make cheese and tofu. This nigari is made using the traditional, time-honored ways of rural Japan.
